In the Toledana town of Méntrida, the San Marcos festivities know their Bañás donuts. The first time that Álvaro Venegas took one of these sweets to his mouth was more than a decade ago, when he went to the town of his friend Jorge Méndez for those dates. «I remember telling him that where I could buy a box to take it. And he told me that no one produced or sold them,» says Venegas. Although at that time the issue stayed there, the idea of doing something together around this sweet kept around Méndez's mind while sharing the classrooms during the business administration and management career. Nor when they already had their respective jobs, so after a year going and seeing the people to learn to make that pastry variety they made the leap into the world of entrepreneurship and founded Berianites in 2022. “There he taught us his uncle and he was giving us advice of 'The dough made it like this, put a little less sugar, do it in this way…”, recalls Venegas on those learning months. They were baptized as Berianitas – in reference to the Mariana pilgrimage to the Mount of Berciana that takes place during the festivities of this Toledo town – and in January 2023 they opened the doors of the workshop. Shortly after, he joined the equation of partners Marcos Zalazar, friend of the people and graphic designer. They had asked if he could make them any design and the following week he presented himself with the development of visual identity: “It seemed very beautiful in the town and was very involved,” says the co -founder. All the Berianitas that the company sells leave its workshop, in which they also dispatch directly to the public. «We want to keep that as part of our essence,» says this 31 -year -old from Madrid. The precious donuts arrive throughout the peninsula through their online sales channel and within the M-30 with home food platforms, in addition to recently counting a position in a city market. They also offer a catering and food truck service with which they go to events of various gastronomic nature. Their products maintain the essence and roots with a traditional mass: «There is a part that is secret, that we cannot tell, because each family has their own recipe,» he says. However, they have given the coverage of the donuts and, in addition to the usual sugar, have added new proposals such as chocolates or pistachio cream. Bercianitas, on whose template there are two other people, billed 41,000 euros last year and plans to reach 100,000 this 2025. Although they cover expenses and reinvote in case of small savings, the company is not yet its means of life and the founders combine it with its jobs. «That part is the one that has cost us the most,» he says about one of the main challenges, among which the operational escalation also stands out. «The form of one is still giving, we have not yet been able to change,» he says. «But the rest of the elements have automated the process a bit.» Now they finalize the web update to simplify the orders interface and work to reinforce and expand the four lines of sale.
