From grandmother’s recipes to culinary pinnacle: the story of the first Mexican restaurant with three Michelin stars

Chef Val Cantú remembers the family gatherings of his childhood in Texas, which always culminated around a table dominated by dishes prepared with his Mexican grandmother’s recipes. His father and uncle were the first to turn that love for the flavors of their land into a business project, which included a tortilla factory. From this heritage is born the culinary proposal that led Californios, in San Francisco, to win three Michelin stars.
